Why you should make your own bratwurst

Homemade bratwurst has numerous advantages. You know exactly what ingredients are in it, can adapt the recipe to suit your taste and cater for special dietary requirements if necessary. With our allerFeinst! Bratwurst seasoning, you also have a base that guarantees perfect seasoning and taste - without any artificial additives!

The secret of our spice mix

Our bratwurst seasoning is more than just a simple seasoning mix. As spice enthusiasts in the heart of Sauerland, we have developed a special blend that takes your bratwurst to a new level of taste. The balanced combination of salt, pepper and other aromatic spices provides a spicy note that simply hits the spot. Of course, we have also focused on sustainability here - you can be sure that we work with high-quality ingredients.

Step-by-step: your own bratwurst

Ingredients for approx. 1 kg of bratwurst

  • 700 g pork (e.g. shoulder or neck)
  • 300 g pork bacon
  • 15 to 20 g of our allerFeinst! Bratwurst seasoning
  • Approx. 1-2 meters of pork casing (available from your trusted butcher)

Preparation

  1. Prepare the meat: Cut the pork and pork fat into small cubes. Freeze them lightly for about an hour so that they are easier to process later.
  1. Add the spice mix: Add the frozen meat and bacon together with the allerFeinst! Bratwurst spice in the mincer. Depending on which texture you prefer, you can put the mixture through the mincer once or twice.
  1. Mix together: Knead the meat mixture thoroughly until all the ingredients are well combined. This distributes the spices evenly and ensures the perfect taste.
  1. Prepare thecasing: Soak the pork intestine in lukewarm water and rinse well. This makes the casing supple and easier to fill.
  1. Shape the sausages: Fill the meat mixture into the prepared casing using a sausage stuffer or sausage attachment for the mincer. Make sure that no air bubbles are trapped and that the sausages are evenly filled. Turn them into even portions - shorter or longer depending on your preference.
  1. Roast or grill: Now the time has come! Your homemade sausages can be fried or grilled immediately. Of course, you can also freeze them and enjoy them later.
