In the production process for dry yeast, the water is removed from fresh yeast. This means that dry yeast does not need to be cooled, making it more flexible to use and giving it a much longer shelf life. Yeast as such is used for many different purposes. As well as being used in baking, yeasts are also involved in the fermentation process of beer, wine and vinegar, for example.

In the production of loose dough, the addition of yeast, as a single-celled microorganism, ensures that sugar is processed into carbon dioxide. The resulting air bubbles give the dough its volume and looseness.

7g dry yeast (approx. 1 tablespoon) is sufficient for 500g flour.
